This course introduces students to the scope and importance of agro-processing activities to the local, regional and national economy. It also addresses the food processing industry, the nature of food and why people consume it, characteristics of raw food materials, basic food chemistry, food security and food safety issues, food laws and regulations and the processing and preservation of food materials.
